Meatballs In Marinara Sauce

Believe me when I say she has some absolutely fab recipes over on her blog! She’s sharing her post with a recipe for meatballs that has me drooling.. Enjoy! 

Speedy Meatballs in Marinara Sauce

The first thing you will need is a mini muffin tin. (I picked up this one in deaz for €1.49)mini muffin tin

By cooking the meatballs in this you don’t need to keep turning them on the pan (leaving the frying pan out all together). When you roll each meatball, place each one in the tin and turn them only once after 15 mins. (there is 12 holes so make 12 meatballs and place them in each hole) good eh…?


  • A spray of olive oil/frylight for slimming world
  • 500g pork mince
  • 1 eating apple
  • 2 onion
  • 1 red pepper
  • A carton of passata (around 400g)
  • A garlic clove
  • A tablespoon tomato puree
  • A teaspoon of thyme
  • A teaspoon  of basil
  • A teaspoon of oregano
  • A sprinkle of the same herbs for the sauce


Preheat your oven to 180c

Grate one of your onions and add it to a mixing bowl with the pork mince and herbs (this is the only grating you need to do)

Make 12 meatballs and place onto your muffin tins.pork meatballs

Put into the oven and cook for 30 mins turning once after 15 mins 

Cook pasta according to packet

Peel and chop the other onion, apple, red pepper and garlic

Put a saucepan on medium heat, spray with olive oil/frylight and add the chopped veggies, garlic and apple

After around 8 mins, when veggies and apple have softened, add the passata and tomato pureepasta sauce

Put on a low heat cover with a lid and cook for 20 mins

Blend with a hand blender

Add a sprinkle of basil, oregano and thyme

Add the cooked meatballs and stir

Serve with pasta…

.. And thats it!!! In half the time… but just as much taste x
